CREAMY CASHEW SAUCE PASTA

Ingredients
CASHEW SAUCE
  • 100 grams cashews
  • 250 ml water
  • juice from ½ lemon
  • ½ garlic clove
  • ½ tsp salt
TOPPING
  • 1 tsp olive oil
  • 2 medium red onions
  • 300 grams mushrooms of your choice
  • 100 grams pine nuts
  • 1 avocado
  • 1 lime
PASTA
  • 500 grams of your favorite gluten-free pasta (rice, corn, chickpea, lentil...)
Instructions
  1. Add the cashews, water, lemon juice, garlic and salt to a high-speed blender
  2. Blend for about 3 minutes until it has a creamy and smooth consistency
  3. Taste and adjust for more flavour as needed
  4. Chop finely the onions and mushrooms
  5. Add olive oil to a pan
  6. Fry the chopped mushrooms and onions with some salt and pepper until they get shiny and golden
  7. Around this time add pasta to boiling water and cook according to package instructions
  8. Toast the pine nuts in another pan without oil on medium heat until golden brown
  9. Make sure you move them consistently so they don’t burn
  10. Cut the avocado in half and slice thinly

  11. Halve the lime

  12. Once pasta is ready, add your sauce directly to the pan and mix together

  13. Arrange the creamy pasta in two bowls

  14. Time for the topping – start with your onion mushroom mix

  15. Next add the roasted pine nuts

  16. And last but not least half an avocado each and the lime – bon appétit!
